Job Description

  • Demonstrate hands on approach to all bakery products produced in the Central Kitchen ensuring quality, presentation and consistency standards meet company standards.
  • Create and standardize recipes
  • Initiate and sustain research in the food and beverage industry.
  • Keep up to date with food trends and understand the local markets within the GCC.
  • Develop and maintain all necessary manuals in liaison with the operations team.
  • Involve in vendor development, equipment sourcing and raw materials finalization, working in coordination with the purchasing department.
  • Augment production capacity when required and maintain quality controls consistently.
  • Organize kitchen teams, allocate resources, execute controls and maintain efficient pastry/bakery operations.
  • Maintain waste at a minimum and determine that portion control is followed to ensure that the required food cost percentage GP margins are obtained.
  • Assist with kitchen audits – safety, hygiene, equipment and food
  • Monitor the activities of chefs and ensure training when required and conduct on the job training as required.
  • Recruit, motivate, mentor, coach and lead kitchen teams.
  • Accept and complete any additional responsibilities delegated by management.
  • Assist management in the development of new concepts.
  • Ensure that standard recipes are adhered to in all bakeries and ensure consistent quality is met in all outlets.
  • Facilitates all health, safety, sanitary rules, regulations and standards according to health department and risk management are enforced and followed correctly.
  • Develop systems, and establish a structured framework by incorporating technology, from recipe development through menu engineering to waste management.
