We are looking for a Restaurant Manager to join our clients team to ensure a smooth and efficient restaurant operation in compliance with all company policies and procedures as well as local laws. This will include achieving all targets concerning cost control quality and standards. The Restaurant Manager will use adequate professional management skills to create and maintain a good and healthy atmosphere within the restaurant. The Manager will assume the role and duties of the assistant manager/line staff if and when the need arises. The employee is expected to provide an efficient and pleasant dining experience to the guests dining in the restaurant in line with company policies and procedures and in a true spirit of hospitality. Additionally this employee is responsible for training and assisting any new employees. The selected candidate will be reporting to the Junior Operations Manager & Senior/Operations Manager.

DUTIES AND RESPONSIBILITIES
Daily Operation
- Responsible for running the restaurant by maintaining optimum food and beverage service productivity and manning levels.
- Manage all staff effectively and carry out constant and consistent on the job training in order to maximize on customer satisfaction and sales.
- Ensures that harmony exists between the kitchen and the service staff.
- Assists in the administration of the restaurant POS system and ensures that all prices in the POS system as well as on the menus are up to date. Ensures that all restaurant collateral is always updated and well presented.
- Keeps him/herself updated on new and changing trends within the market and makes suggestions for the outlet should there be an opportunity for improvement or changes.
- Ensures that he/she is visible and available to guests and staff alike.
- Takes full responsibility for the restaurant including financial performance operational performance and health and safety.
- Check cleanliness and hygiene in all areas on a daily basis and ensures that all is compliant with HACCP.
Managing
- Analysis all feedback received from guests identifies areas for improvement and formulates solutions accordingly.
- Supervises the performance of all employees reporting to him/her. Gives appropriate feedback to all staff on a regular basis and intervenes when needed to avoid conflict or challenges. Through daily check on all standards quality of service and performance.
- Works closely with other managers from other outlets when needed to maximize collaboration between the restaurants.
- Delegates and assigns duties to all staff as needed.
- Prepares monthly objectives for the restaurant in addition to ongoing job responsibilities.
Finance and Control
- Prepares the monthly restaurant forecasts and works together with the team to achieve these forecasts.
- Ensures that cross training is carried out during slower months to have a more costeffective operation during these low volume periods.
- Is effective in cost control for all items in stock.
- Monitors staff attendance and absence to ensure that these costs are being well controlled.
- Ensures that cash procedures are followed and executes all financial policies.
- Reacts immediately to losses of stock or revenue as well as any other high costs and takes necessary action to prevent this recurring.
- Ensures that the restaurant meets (and where possible exceeds) the monthly financial targets set in terms of revenues and costs.
Human Resources and Training
- Takes the initiative to hold periodic meetings with staff to address all areas of the operation.
- Practices good leadership skills and motivates staff and develops good working relationships with all employees.
- Maintains effective communication within the restaurant including daily briefings.
- Assigns duties within the restaurant to maximize on each employee s talents skills and knowledge.
- Follows up daily on food quality service and standards.
- Identifies training needs and implements training accordingly.
- Assists in the planning and execution of training as needed.
- Ensures that a proper orientation for all new employees is carried out and that all the contents of the employee handbook are explained to them.
- Ensures that weekly staff schedules are prepared in accordance with forecasts and business trends in all areas of The restaurant and that the manning levels reflect the business being generated in the restaurant.
Customer Relations
- Smiles and greets all guests upon entering the restaurant personally escorts them to their table and pulls out at least one chair at the same time showing an open arm gesture to welcome the guests to take a seat.
- Ensures that all guests are treated with respect by all employees including proper greeting and seating as per above.
- Resolves any guest complaints in a calm and efficient manner.
- Works and assists employees on the floor.
Safety and Security
- Ensures that proper practices are in place to reduce the risk of workrelated accidents.
- Is completely knowledgeable of all fire emergency and evacuation procedures and ensures that all staff are also knowledgeable in these areas.
- Ensures that all hazards or potential hazards are reduced immediately.
- Follows up to ensure that all employees are using the proper protective clothing and equipment where necessary.
- Ensures that all staff are working in a safe manner that does not harm them or others around them.
- Ensures that all health and safety regulations are being followed in line with HACCP.
- Responsible to see that the restaurant is safe for all employees and guests at all times.
General
- Actively promotes customer relationship management through his/her interactions with guests including the building of customer databases where possible.
- Is fair and polite to staff and guests alike at all times encourages teamwork and leads by example.
- Finishes all requested tasks on time and ensures that all deadlines are met.
- Performs any additional tasks assigned by senior management with a positive cando attitude.
- Promotes teamwork and collaboration between Restaurants through his/her words and actions.
- Ensures that all company property is safeguarded and taken care of at all times.
EXPERIENCE KNOWLEDGE AND SKILLS
- Previous experience with a wellestablished restaurant in Malta.
- Knowledge of HACCP regulations.
- Knowledge and a passion for quality food and drink and outstanding customer service.
- Be a clear communicator fluent in English and ideally in Maltese and possibly with knowledge of other languages.
- Be able to motivate staff by leading from the floor and sharing knowledge and experience.
- Be driven and goaloriented.
- Candidates should expect to produce a clean police conduct certificate if selected for client interview.
- NonEU nationals should hold a valid work permit to work in Malta.
EDUCATION
Have certification from the I.T.S or a similar catering college.
WORKING TIME
Shift basis; Monday to Sunday two days off (depending on the roster) 40 hours per week.
