- Assists other members of the kitchen brigade in ensuring that all day to day operational matters are handled on time and guest expectations are met
- Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
- Ensures that utensils is stored prepared and secured hygienically and safely
- Maintains standards of hygiene and cleanliness in all kitchen and related areas
- Ensures that miseenplace and preparation procedures are correctly followed
- Supervise the duties of all stewarding employees.
- Supervise the consumption of all chemicals / cleaning supplies on daily basis.
- Maintain equipment such as dishwashers ovens and refrigerators in good working condition.
- Ensure that the stewarding department meets all health and safety regulations.
- Implement cleaning and sanitation procedures without exception.
- Coordinate with culinary & service team to ensure smooth operations.
- Control & document all going out equipment and ensure proper receiving upon return.
- Prepare reports on daily cleaning checklist for review.
Qualifications :
2 Years experience in Stwrding/Culinary.
