What you will be doing:
- Review daily events and reservations with the Culinary Leadership to ensure timely preparation of food items in line with Fairmonts high standards of quality and efficiency.
- Execute food preparation cooking plating and presentation with precision meeting the expectations of a worldclass culinary experience.
- Maintain a clean and organized kitchen environment adhering to all food safety and sanitation protocols.
- Ensure proper rotation and storage of products in all chillers to minimize waste and spoilage.
- Handle store prepare and serve all food products safely strictly following Fairmont Waterfronts guidelines and Food Safety standards.
- Complete all EHC (Environmental Health Consultancy) standards daily including filling out temperature logs labelling and dating items and maintaining cleanliness in food storage areas.
Qualifications :
Your experience and skills include:
- Previous 2 years experience in a highend kitchen required
- High level of knife skills
- Journeypersons papers or international equivalent preferred
- Diploma/Certification in a Culinary discipline preferred
- BC Food Safe Certification required
- Strong interpersonal and problemsolving abilities
- Highly responsible & reliable
- Ability to work well under pressure in a fastpaced environment
- Ability to work cohesively as part of a team
- Ability to focus attention on guest needs remaining calm and courteous at all times
