Job Description

Chef de Cuisine Wildflower & Grill Room

As Chef de Cuisine work in a kitchen committed to preparing and serving the finest quality meals whilst inspiring and fostering our Culinary teams.

Salary Range: $78000 $88000 per annum dependent on experience and qualifications

Job Duties Include:

  • Ensure the consistency in the preparation of all food items according to hotel recipes and food safe standards. Controlling food costs and wastage
  • Conduct daily shift briefings whilst coaching mentoring and driving colleagues. Successfully manage labour productivity
  • Liaise daily with restaurant Managers to keep open lines of communication regarding guest feedback and service issues.
  • Maintain and enhance the food products through creative menu development and presentation whilst ensuring proper and adequate levels of food are held and ordered
  • Adhere to menu engineering program and create seasonal and holiday menus according to hotel guidelines

Qualifications :

  • 34 years high volume culinary management experience in a luxury hotel or large kitchen environment
  • Safe Food Handling Certification required
  • Strong skills in food presentation with a familiarity of contemporary serving styles
  • Proven track record of cost control including food equipment labour and wastage
