Job Description




Job Title: Head Sushi Chef
Company: MYKASHI (O SUSHI BAR)
Location: Senegal (Dakar Almadie Saly Point E)

About Us:
O SUSHI BAR is the first sushi fusion restaurant chain in Senegal offering both restaurant and takeaway services. We pride ourselves on serving innovative sushi dishes in a vibrant atmosphere and are looking to establish ourselves as one of the best sushi destinations in the region.

Job Start: January 2025

Contract Type: 1year renewable

Working Hours:

  • 45 hours per week
  • 1 day off per week
  • 1 bonus afternoon off per month (Sunday)
  • Daily hours: 7.5 hours (11:0014:30 and 18:0022:00)


Requirements

Job Responsibilities:

  • Create a rich sushi menu using various main ingredients and raw fish (such as salmon tuna and unagi).
  • Prepare all types of sushi including maki nigiri and sashimi.
  • Select fresh fruits and vegetables to craft highquality sushi dishes (e.g. avocado mango carrots).
  • Add additional flavors to sushi rolls with ginger rice vinegar wasabi and soy sauce when appropriate.
  • Manage food prep activities such as boiling rice.
  • Coordinate with wait staff to ensure proper cooking addressing special requests and food allergies.
  • Prepare appetizers soups and salads in line with the philosophy of Japanese cuisine.
  • Monitor food stock and place orders as necessary.
  • Recommend and introduce new modern recipes like sushi burgers.
  • Maintain hygiene standards and ensure your workspace is clean at the end of each shift.

Skills and Qualifications:

  • Proven experience as a sushi chef particularly with Japanese cuisine.
  • Ability to handle a wide range of raw fish and other ingredients with precision and care.
  • Strong attention to detail to ensure all dishes meet highquality standards.
  • Good communication skills to coordinate with the kitchen team and frontofhouse staff.
  • Availability to work during our operating hours.
