This role involves crafting a variety of dishes that represent the culinary traditions of South India including items like dosas idlis vadas sambar and more while maintaining consistency flavor and hygiene.
Key Responsibilities:
1. Preparation of South Indian Dishes:
o Prepare traditional South Indian dishes including dosas idlis vadas sambar rasam upma pongal and other regional specialties.
o Follow authentic recipes while maintaining consistency in taste and presentation.
o Adjust recipes and methods to match the restaurant s standards and customer preferences.
2. Menu Development and Innovation:
o Collaborate with the management or kitchen team to create and update the menu with seasonal items new dishes or variations of traditional dishes.
o Ensure the menu reflects the true flavors of South Indian cuisine while incorporating creativity and contemporary twists when appropriate.
3. Food Quality and Safety:
o Ensure that all food prepared is of the highest quality adhering to strict hygiene standards.
o Maintain proper food handling practices including storage temperature controls and cleanliness.
o Inspect ingredients for freshness and quality before use.
4. Inventory and Ingredient Management:
o Oversee and manage the procurement of essential South Indian ingredients like rice lentils spices coconut and curry leaves.
o Ensure the proper storage and organization of ingredients in the kitchen.
o Monitor stock levels and inform the kitchen manager of any shortages or necessary orders.
5. Cooking Techniques and Equipment:
o Use traditional South Indian cooking methods such as steaming frying grinding and tempering.
o Operate kitchen equipment like grinders steamers and stoves effectively to prepare authentic dishes.
o Maintain and clean cooking tools equipment and workstations after each use.
6. Customer Satisfaction and Presentation:
o Ensure that each dish is presented beautifully with attention to detail in garnishes plating and portioning.
o Respond to customer feedback regarding food quality or taste and adjust preparation methods as needed.
o Maintain high standards of cleanliness and organization in the kitchen to provide a positive dining experience.
7. Team Collaboration:
o Work closely with other kitchen staff including sous chefs line cooks and kitchen assistants to ensure smooth and efficient kitchen operations.
o Mentor junior chefs or kitchen staff by sharing knowledge about South Indian cuisine and cooking techniques.
8. Compliance and Safety:
o Adhere to food safety and hygiene regulations as per industry standards and legal requirements.
o Ensure the kitchen is compliant with health and safety guidelines at all times.
