What you will be doing:
- Ensure consistency in the preparation of all food items according to hotel recipes and food safety standards while controlling food costs and minimizing wastage
- Train motivate supervise and develop all staff including Sous Chefs while fostering a positive work environment
- Conduct daily shift briefings and provide coaching mentoring and leadership to colleagues driving high performance and managing labour productivity
- Liaise daily with Restaurant Managers to maintain open lines of communication regarding guest feedback and service issues
- Maintain and enhance food products through creative menu development and presentation ensuring proper and adequate levels of food are held and ordered
- Adhere to the menu engineering program creating seasonal and holiday menus in alignment with hotel guidelines
- Communicate regularly with the Executive Chef and Executive Sous Chef regarding any problems irregularities or concerns and offer solutions or courses of action
- Ensure a safe working environment by overseeing regular maintenance of equipment proactively preventing accidents and diligently addressing safety hazards
- Perform other duties and projects as assigned
Qualifications :
To be successful in this role we ask that you have:
- 34 years of highvolume culinary management experience preferably in a luxury hotel or large kitchen setting
- Safe Food Handling Certification and Red Seal Certification (Cook) or international equivalent
- Proven experience in cost control and managing food equipment labor and wastage
- Ability to manage and lead in a unionized environment (asset)
- Strong culinary skills including food presentation and contemporary serving styles
- Computer proficiency particularly in Microsoft Windows applications
- Interpersonal skills to manage a diverse team and address problems effectively
- Ability to perform under pressure and maintain focus on guest satisfaction
Physical Aspects of Position (include but are not limited to):
- Shared office space with Food & Beverage leaders.
- Regular standing walking and lifting (up to 30 lbs).
- Frequent kneeling pushing pulling and use of stairs and ramps.
