- Ensure efficient friendly and professional food & beverage service is provided to all guests.
- Familiarise yourself with VIP and regular guests to ensure their requests and needs are met.
- Set up systems to protect and maintain control of food service equipment correctly recording breakages and carry our regular stock takes.
- Set up and maintain a weekly cleaning schedule for the food service areas to achieve the highest possible hygiene and cleaning standards.
- Ensure team members are competent in menu dietary and allergens knowledge. Ensure team members have some understanding of beverages and wine list and are competent to make suggestions as required. Ensure staff are aware of current promotions and are able to maximise sales to guests.
- Ensure guest billing is completed accurately following hotel procedure and that correct charges are posted.
- Be knowledgeable of and operate within appropriate outlet and hotel liquor licensing guidelines and House Management Policies.
- Maintain currency of Responsible Service of Alcohol (RSA) certification amendments and updates and adhere to RSA principles.
- Greet and welcome guests assist with enquiries. Assist guests with menu offerings and maximise sales opportunities through knowledge of product and suggestive selling. Effectively take orders. Ensure accuracy by repeating order(s) to the guests dockets written clearly and correctly input into the point of sale system.
- Check ordered meals on collection from kitchen and deliver to guests promptly to maintain temperature and appearance; ensure items are announced.
- Maintain clean and neat presentation of bar and restaurant area(s) following set opening closing and daily procedures.
- Oversee the setup and reset of specific Conference & Function activities as required.
- Assist with preparation of rosters ensuring that suitable and cost effective employee levels are maintained at all times. Rosters to be authorised by appropriate department head
Qualifications :
- Experience: 23 years in a supervisory role within a bar or hospitality setting.
- Leadership: Strong team management training and motivational skills.
- Customer Service: Exceptional skills in delivering memorable guest experiences and resolving complaints.
- Beverage Knowledge: Expertise in cocktails wines beers and stock management.
- Operational Skills: Familiarity with POS systems cash handling and roster management.
- Compliance: RSA certification and understanding of licensing and health regulations.
- Experience in highvolume or eventdriven venues.
- Knowledge of industry trends and First Aid Certification (preferred).
