Job Description

Roles and responsibilities


We believe every plate tells a story. So, we’re searching for an Chef de Partie-Pastry with a palate for serving up truly memorable dishes. Whenever and wherever our guests choose to dine. Behind the scenes, you’ll ensure quality, maintain high standards and keep the kitchen running smoothly.

A little taste of your day to day

Your role will include but not be limited to:

Lead and inspire a team of pastry staff, fostering a positive, collaborative, and high-performance kitchen environment.
Design, create, and execute a wide variety of pastry items, including but not limited to desserts, breads, pastries, chocolates, and confections, tailored to both a la carte offerings and special events.
Stay ahead of pastry trends and culinary innovations, consistently experimenting with new techniques, flavors, and presentation styles to ensure our offerings remain fresh and exciting.
Ensure that all pastry items meet the hotel’s rigorous standards for taste, texture, and presentation, while maintaining a high level of consistency in production.
Mentor and train pastry team members in technical skills, kitchen operations, and quality control within the department.
Oversee the purchasing of ingredients, maintaining stock levels and ensuring proper storage techniques to preserve freshness and quality.
Work closely with the Executive Chef and other departments to develop and execute seasonal menus and special events.
Create stunning custom desserts and pastry displays for weddings, gala events, and special occasions, ensuring each is a unique and memorable experience.
Maintain strict adherence to health and safety standards, ensuring cleanliness, hygiene, and safety protocols are followed in all kitchen operations.
Pastry Preparation and Production
Create Pastries and Desserts: Prepare a variety of pastries, desserts, cakes, cookies, tarts, pies, and other baked goods from scratch, following recipes or creating new ones.
Baking and Decorating: Bake, decorate, and plate desserts with precision, ensuring high standards of presentation and taste.
Manage Pastry Station: Oversee the daily operations of the pastry section, ensuring that the production of pastries is efficient, well-organized, and meets customer expectations.
Batch Production: Prepare large batches of items like pastries, breads, and other desserts for events, banquets, or high-demand times.
Recipe Development: Assist the Pastry Chef in creating new recipes and seasonal dessert offerings to keep the menu fresh and innovative.


Desired candidate profile

Minimum of 5 years of experience as a Pastry Chef, preferably in a luxury hotel, fine dining, or high-end restaurant environment.
Formal training from a recognized culinary school, with specialization in pastry arts preferred.
A true passion for pastry and an eye for detail, with the ability to innovate and create visually stunning, delectable desserts.
Proven experience leading, mentoring, and motivating a team of culinary professionals.
In-depth knowledge of pastry techniques, baking methods, plating and presentation, and dessert trends.
Proficiency in advanced pastry techniques such as sugar work, chocolate tempering, and sugar sculptures.
Strong communication and interpersonal skills, with the ability to collaborate effectively with various departments.
Quality Control
Maintain Quality Standards: Ensure that all pastries and desserts meet the restaurant’s quality standards in terms of taste, texture, and presentation.
Consistency: Ensure consistency in product quality by adhering to standardized recipes and portion control.
Taste Testing: Regularly test pastries for flavor and texture to ensure they meet customer expectations.
Team Leadership and Supervision
Supervise Pastry Assistants: Oversee and train junior pastry chefs or kitchen assistants in pastry techniques and proper kitchen practices.
Delegate Tasks: Assign specific tasks to pastry team members and ensure the smooth operation of the pastry section.
