Job Description
- Responsible of Checking all Meat and Fish on delivery for quality and Quantity.
- In charge of cleanliness of the Meat and Fish preparation rooms and proper storage of all Meat and Fish items in the Freezers and Fridges.
- The Butcher must be fully aware of the company controlling and food preparation procedures e.g. portion control as outlined in the F&B manual.
- Properly measures and portions all food items. Complies with all portion sizes quality standards department rules policies and procedures.
- Assist the Head Chef with menu preparation and ensuring adequate supplies are available for expected service.
- Planning preparation and execution of highquality food offerings for various conferences and events.
- Supervision of kitchen in the absence of the Head / Sous Chef.
- Maintain excellent presentation standards and cost control for all food and beverage outlets whilst maintaining recipe standards.
- Ensure strict stock rotation and minimum wastage. Have stock control procedures implemented and maintained.
- Keep all working areas clean and tidy & ensuring all equipment is maintained serviced and cleaned to WHS standards.
Qualifications :
- Proven experience in a Cold Kitchen role.
- A culinary degree or relevant certification is a plus.
- Strong knowledge of food safety hygiene and cleanliness standards.
- Ability to prepare recipes and manage market orders using the FutureLog system.
- Ability to work under pressure and in a fastpaced environment.
- Attention to detail and a passion for creativity in food presentation.
- A team player with excellent communication skills.
