Job Description

We are currently seeking experienced and skilled Specialty Chefs to join our culinary team at Fairmont Mumbai. As a Specialty Chef you will be responsible for leading and executing the preparation and presentation of highquality dishes in your respective cuisine specialty. You will collaborate with our Executive Chef to develop menus maintain food quality standards and ensure an unforgettable dining experience for our guests.

Key Responsibilities:

  • Lead the preparation and presentation of dishes within your speciality cuisine area ensuring adherence to recipes portion sizes and quality standards.
  • Collaborate with the Executive Chef to develop menus that showcase your culinary expertise while considering guest preferences and dietary restrictions.
  • Train and mentor kitchen staff on proper cooking techniques food safety procedures and presentation standards.
  • Maintain inventory levels and order supplies as needed to ensure the smooth operation of the kitchen.
  • Monitor food costs and minimise waste to achieve budgetary goals without compromising quality.
  • Ensure compliance with sanitation and hygiene regulations to uphold the highest standards of food safety.
  • Stay updated on industry trends new ingredients and innovative cooking techniques to continuously enhance the culinary offerings at Fairmont Mumbai.

Qualifications :

  • Proven experience as a Specialty Chef or similar role for a minimum of 2 years. 
  • Culinary degree or equivalent certification from a recognised culinary institution.
  • Strong knowledge of culinary techniques flavour profiles and ingredient sourcing.
  • Excellent leadership skills with the ability to motivate and inspire a team.
  • Ability to thrive in a fastpaced environment and maintain composure under pressure.
  • Exceptional attention to detail and a passion for creating memorable dining experiences.
  • Knowledge of food safety and sanitation regulations.
