**Job Purpose**: To lead, guide and manage the BOH team in the planning, preparation, set-up and execution of food items in line with our restaurant vision, mission and values. To monitor and review performance of the our team, providing coaching, support and advice where required, to ensure that the highest standards of quality, service and facilities in all areas are continuously upheld. • *Key Accountabilities**: - To set performance objectives for the team, regularly monitoring and reviewing progress through one-to-one meetings. - To provide coaching and on-the-job training to improve individual and team performance. - To take ownership of weekly deliveries and stock control management. - To be responsible for the team’s production and have excellent knowledge and competency of maki sushi, nigiri sushi and sashimi, ensuring consistent food standard is delivered at all times. - To produce new and innovative recipes for the team to execute. - To follow the relevant Sumosan’s guidelines, standards and procedures at all times. - To maintain effective communication with your Management Team colleagues through sharing knowledge and information regularly and taking an active role in weekly Management Team meetings. - To ensure the team adheres to closing and opening checklists, cleaning checklists, stock control, procurement, deliveries and storage and food cost management. - To discuss ideas and suggestions with the Sushi Bar team and other colleagues that will continuously improve the operations of the sushi bar, as well as the wider restaurant areas. - To control costs by maintaining effective inventory of food, utilising food surpluses, portion control and wastage monitoring. - To keep appraised of food hygiene rules and regulations, following these at all times. - To keep the sushi bar area clean, neat and tidy at all times. - The above list is not exclusive or exhaustive; post holders are expected to be professional, co-operative and flexible in line with needs of the post, department and the needs of the restaurant. - **Experience in Arabic cuisine.** • *Experience**:
