Maintain consistency and excellent quality in food taste temperature and presentation.
Ensure the quality and cleanliness of all food presentations through very creative procedures.
Coordinate all restaurant banquet and food production as well as any special duties assigned to chefs and other staff under his/her supervision.
Examine all setups for restaurant and banquet functions. Responsible for the proper timing during service and that the food supplied is always of the greatest quality.
Monitor and enforce portion control established with the recipe cards and the butcher test to reduce waste and spoilage.
Check stores and freezers to ensure proper storage and recycling of leftovers.
Ensure excellent communication between kitchens and other areas.
Maintain appropriate controls on purchase orders and requisitions.
Track monthly food inventory turnover and slowmoving products.
Ensure purchasing receiving and all storage are efficiently handled
Monitor staff schedules for the assigned outlets
Conduct section / departmental meetings and staff daily briefings
Manage staff appraisal process
Qualifications :
Minimum of 12 years of culinary experience with at least 5 years at an international class hotel or large volume 5star operations.
Indepth culinary expertise
Finished a globally recognised apprenticeship culinary school or certified training program.
Apprenticeship or any other culinary certificate/diploma is a benefit.
