Job Description

The Sommelier is responsible to drive the development and execution of the hotels beverage strategy with a focus on elevating the guest experience through a carefully curated wine portfolio. Overseeing all aspects of financial management including cost control ensuring sales budgets and profit targets are consistently achieved and surpassed.

The main duties of this role include:

  • Create and maintain an innovative comprehensive and sustainable Wine Program in line with Brand requirements and target audience. 
  • Develop partnership with suppliers and secure quality products. Source and procure wines from various regions ensuring a wellbalanced selection that caters to a range of preferences and budgets. 
  • Monitor industry trends and emerging wine regions to keep the wine program innovative and competitive. 
  • Analyse sales performance and Guest feedback to continuously refine and improve the wine selection and service. 
  • Lead efforts to maximise revenue by enhancing spend per head and consistently exceeding monthly revenue goals.

Qualifications :

  • Proven experience as a Sommelier in a luxury or fine dining environment. 
  • Certification from a recognised wine education institution (e.g. WSET Court of Master Sommeliers) is essential.
  • Extensive knowledge of local and global wine regions varietals and current wine trends. 
  • Exceptional interpersonal and communication skills with a flair for storytelling and guest engagement. 
  • Strong organisational skills with a keen attention to detail and an ability to manage multiple tasks in a dynamic environment. 
  • Experience using Restaurant Point of Sale Systems such as Micros Symphony and Purchasing System such as Purchase Plus is advantageous.  
  • Queensland Responsible Service of Alcohol certification is required. 
  • Must have valid Australian Working Rights.
  • Must be able to work various shifts including evenings weekends and public holidays.
